Burger Love #1...The BEEF!
We'd like to think we know a thing or two about developing and serving handcrafted, juicy burgers! Been doing it for years now and we're always on the lookout for new ideas and tweaks whenever we see some potential!
Like with anything new, inspiration is a key element. With premium Burgers being such a big thing in Ireland for years now, plenty of sparks have come from top burger joints there, (Bunsen Burgers & BuJo in Dublin, Box Burger in Wicklow & Handsome Burger in Galway to name a few).
Along with that, Ronan and the Kitchen crew love playing with ideas and trying all sorts of wild combinations for future Burgers. Some good fun is always had along the way. As it is at our tasting sessions (to be precise 'focus groups' is the correct term) we can tell you! All in the name of finding that something extra special for you all to enjoy!

Now, about the ingredients.
Starting with the most important part...the patty! We source our Beef from FX Buckleys Butchers in Ireland. Straight up, Irish Beef, it's hard to find better beef anywhere on the planet! We use beef both Hereford and Angus grass fed cattle.
For the patty mix itself we use 3 different cuts of 28 day Dry aged grass-fed beef. Brisket, Chuck and Lap. What ratio for the 3 different cuts?? Well, that part is a secret!
The beef is freshly ground each and every morning in our kitchen (the guys love that part!) A touch of sea salt and black pepper added and then shaped in to 170g patties with about a 15% fat content...getting this level right is key in getting the burgers bang on and juicy!
That's it, keep it simple, get the ratios spot on and then we get our patties just right :)

Next up are the Buns. Home made Brioche Buns, you should get the baking smells coming from the kitchen when the buns are coming out of the oven, unreal!
Now, they're no easy thing to master. Dough mixed, shaped individually, and then covered and left to rise...the timing of how long to leave them rising is crucial, Thankfully the crew have their systems boxed off!

So there we have the Patties and the Buns, the common denomination in our 4 Beef Burgers. After that, each of the 4 burgers have their own
special ingredients on top!
Amongst them are Ballincollig Streaky Bacon which we source from FX Buckleys in Ireland;
Irish Cheddar Cheese which we smoke in our own Smoker (this process just intensifies the taste so much!);
local vegetables supplied to us daily from the renowned veg supplier, Gottfried Kreimer; various Austrian cheeses....and very important, the different homemade sauces that the kitchen crew have absolutely nailed!
Next up is the prepping. With a sprinkling of salt the patties are on the grill for a couple of minutes each side and then the top part of the brioche bun is placed on top of them and covered with a Closh for the final 90 seconds!
Why that, you may ask? It helps to seal all of those aromas & flavors that are released through the grilling of the patties!

Up next, adding whichever extra ingredients are needed for any particular burger both on top & underneath the patty. We then wrap the burgers up in a recyclable paper.
